Local, disposable sandbox for the Memorix entity processing pipeline: create a simulation, advance stage by stage, and watch record JSON grow — without touching memorix-entities or memorix-catalox.
v1 uses fabricated stage transitions in-browser (checklist §1.2 sandboxed execution API does not exist yet). Shared demo domain lives in memorix-simulator-shared. Spec/checklist: .operational/pipeline-simulator/.

Honesty
- Stage logic is fabricated — UI badges say so; not a real CLI dry-run.
- Enrichment / roll-down are explicit no-ops for the kitchen-recalls demo scope.
- Custom record-id seeding is disabled until
GET /snapshots/...is wired. - Flow D to Data Simulator: built-in demos via shared package; custom sims via Export checkpoint → Data Simulator Import.
