Simple replacement

gulp.src('/path/to/file.xml')
    .pipe(xmlpoke({
      replacements : [{
          xpath : "//foo"        
        , value: "bar"
       }]
     }))
    .pipe(gulp.dest('/path/to/dest/file.xml'));

Replacing with a function

gulp.src('/path/to/file.xml')
    .pipe(xmlpoke({
      replacements : [{
          xpath : "//foo"        
        , value : function(node) { 
          var nodeValue = node.firstChild.data;

       }]
     }))

Using Namespaces
